In an interview, Laura García proposed making a fake broccoli couscous and gave us a very easy recipe to prepare.
“Broccoli couscous is so delicious that even those who aren’t big fans of broccoli enjoy it. Plus, it’s perfect for using the stalk,” she told us in the interview.
With the quantities she suggests, you have two or three servings, depending on the size of the broccoli. The best part? They’re ready in five minutes. Yes, five! Take note of the recipe detailed below:

Ingredients
- One whole broccoli
- 2 tablespoons of olive oil or ghee
- Salt to taste
- Other spices to taste: pepper, turmeric, garlic, Cajun, curry, etc.
Instructions
- Wash the broccoli under the tap and cut it into large pieces.
- Don’t discard the stalk; peel it to remove the tougher pieces and cut half a centimeter from the bottom end.
- Place 5 or 6 medium pieces in a food processor or blender and process for about 3 seconds, just enough to make it the size of rice or couscous grains. If you process it too much, it will be too mushy.
- Process the broccoli or cauliflower in batches until you have everything ready.
- Heat the 2 tablespoons of olive oil or ghee in a large pan and add the broccoli.
- Sauté for 5 minutes over medium/high heat, stirring occasionally to ensure even cooking.
- Finally, add the salt and the spices you want.
