Broccoli Recipe: Broccoli and Cauliflower Croquettes

To everyone, croquettes are a favorite, right? Perhaps the most typical ones in Spain are the ham or chicken varieties, classic products of our gastronomy that have never been missing in any family that appreciates good food.

 

In fact, despite being so delicious, we must not forget that croquettes are a food that can easily turn into a high-calorie dish, especially considering that their cooking process involves frying, which further increases their calorie count.

 

But, did you know that you can also opt for healthier alternatives using vegetables like broccoli? Today, we bring you a finger-licking recipe: fabulous broccoli and cauliflower croquettes.

 

Ingredients for broccoli and cauliflower croquettes

To prepare this recipe with approximately 15 units, you will need the following ingredients:

 

  • 250 grams of broccoli.
  • 250 grams of cauliflower.
  • 2 eggs.
  • 80-100 grams of onion, equivalent to approximately 1 small onion.
  • Extra Virgin Olive Oil (EVOO).
  • Garlic, parsley, and other spices like pepper, for example.
  • A little grated cheese.

 

How to prepare broccoli and cauliflower croquettes

First, preheat the oven to 180 ºC. Once done, cook the broccoli and cauliflower by steaming both cruciferous vegetables with a little water using the microwave for added convenience and efficiency. This will soften the cauliflower and broccoli, making it easier to work with later.

 

Afterward, mash the broccoli and cauliflower with a fork until you get a rather soft texture. Then, sauté the previously chopped onion into very small pieces and add it to our mashed cauliflower and broccoli.

 

Next, add the 2 eggs and use spices to taste, possibly accompanied by a touch of cheese according to each diner’s preferences. We particularly recommend a bit of gouda cheese as it gives a fantastic flavor.

 

Once the mixture is ready, add a drizzle of extra virgin olive oil and shape these fantastic broccoli croquettes into your favorite form.

 

After all the preparation process, bake our broccoli and cauliflower croquettes in the preheated oven at 180ºC for about 15 minutes, checking until they are golden. If they brown before 15 minutes, take them out of the oven to prevent burning. The times are approximate and depend on each appliance.

 

Once we’ve completed all these steps, all that’s left is to plate and optionally accompany with a light sauce, like mayonnaise or honey and mustard. Although it really won’t be necessary, as with this mix of ingredients, the flavor will be excellent.
