Broccoli waffle
📝 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
• ½ broccoli.
• 250 ml whole milk.
• 100 gr Greek yogurt.
• 30 ml olive oil.
• 2 eggs (medium).
• 200 gr whole wheat flour.
• 3 gr dry baker’s yeast.
• 1 teaspoon nutmeg.
• 1 pinch of salt.

👨‍🍳 𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐭𝐢𝐨𝐧:
1. Grate the florets of ½ broccoli. Reserve in a large bowl.
2. Crack the eggs over the broccoli.
3. Add milk, yogurt, olive oil, nutmeg, salt, flour, and yeast.
4. Beat well until obtaining a homogeneous batter.
5. Let it ferment for 30 minutes.
6. Once fermented, prepare a waffle maker and cook the waffles one by one (if you don’t have a waffle maker, you can make them in a pan like pancakes).

Broccoli bread
📝 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
• 180 gr grated broccoli florets.
• 2 large eggs.
• 50 gr oat flakes.
• 1 teaspoon mixed spices to taste.
• 1 teaspoon baking powder.
• A pinch of salt.
• Mixed seeds for sprinkling.
👨‍🍳 𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐭𝐢𝐨𝐧:

1. Place broccoli florets in a large bowl.
2. Crack two eggs and add them to the bowl.
3. Add oat flakes, baking powder, mixed spices, and salt.
4. Mix well.
5. Place in a rectangular microwave-safe dish and spread until uniform.
6. Sprinkle the seed mixture.
7. Cook at maximum power for 6 minutes.
8. Remove from the microwave and let it cool.

Chickpea and broccoli croquettes
📝 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
• 200 gr cooked chickpeas.
• 1 carrot.
• ½ onion.
• ½ broccoli.
• Some cumin seeds.
• Salt and pepper to taste.

👨‍🍳 𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐜𝐢𝐨𝐧:
1. In a food processor, place chickpeas with carrot, onion, cumin, and add salt and pepper to taste.
2. Chop well.
3. Form small balls with the mixture, pressing well between your hands.
4. To cook them, you can fry them in vegetable oil until they begin to brown, bake in the oven at 180ºC for 10 minutes or until they start to brown, or air fry for 15 minutes at 160ºC.

𝐫-𝐟𝐫𝐲 𝐧𝐨𝐨𝐝𝐥𝐞𝐬
Stir-fried broccoli with chickpea noodles
📝 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
• 1 broccoli
• 1 onion.
• 200 gr cooked chickpeas.
• 100 gr rice noodles or noodles.
• 1 teaspoon cumin seeds.
• 2 tablespoons soy sauce.
• Salt and pepper to taste.

👨‍🍳 𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐜𝐢𝐨𝐧:
1. Wash and chop the broccoli. Peel and julienne the onion.
2. Heat a pan with a couple of tablespoons of olive oil and cook the onion until it begins to brown. Add the broccoli, cumin, and stir well.
3. Cook for about 10 minutes and add the chickpeas, stir well, and continue cooking.
4. Meanwhile, prepare the rice noodles according to the manufacturer’s instructions.
5. Add them to the pan, drizzle with soy sauce, mix well, and serve.
