Recipe 1: Hummus with Crudites
Ingredients:
- 200 gr. of cooked chickpeas.
- Juice of half a lemon.
- 4 tablespoons of olive oil.
- A pinch of cumin.
- Salt to taste.
Preparation:
Using a food processor, finely blend all the ingredients until you get a creamy and homogeneous mixture. Refrigerate.
Serve with carrot sticks and broccoli florets.
Recipe 2: Broccoli and Tortilla Rolls
Ingredients:
- ¼ broccoli.
- 2 tablespoons of grated cheddar cheese.
- 1 Egg.
- Salt to taste.
Preparation:
Using a grater, finely grate the broccoli.
Beat the egg with a little salt.
Heat a pan and pour the egg, sprinkle broccoli and cheese over it.
Once set on one side, flip and cook for another couple of minutes.
Once off the heat, roll and cut into pieces.
Serve with cherry tomatoes.
Recipe 3: Brocomole
Ingredients:
- ¼ broccoli.
- ½ avocado.
- ¼ tomato.
- ¼ sweet onion.
- Juice of half a lemon.
- Salt to taste.
Preparation:
Heat a pot and cook the broccoli for about 3 or 4 minutes. Drain and let it cool.
Using a food processor, chop the broccoli.
In a large bowl, mash the avocado with finely chopped tomato and onion.
Mix with broccoli, drizzle with lemon juice, and add salt to taste. Refrigerate.
Serve with tortilla chips or corn tortillas in pieces.
