As the administrator of the profile created by Carlos Ríos, Realfooding, and the moderator of the application that aims to discover unhealthy foods, she is also in charge of a project that demonstrates that one can eat delicious and healthy without being a master chef or having a lot of time. She leaves a clear idea: we don’t need to be great chefs or have a lot of time to eat better.
A few weeks ago, she surprised us with this wonderful vegan creamy rice on Instagram. And we couldn’t resist it! Do you want to make it at home? Here we go.
What you’ll need
- 100 g of dry rice per person
- Boletus mushrooms
- Onion
- Carrot
- 1 ripe tomato
- Diced bell pepper
- Broccoli
- Diced zucchini
- A pinch of paprika, curry, onion powder, garlic powder, black pepper, rosemary, thyme, and salt.
- 10 ml of extra virgin olive oil
- Water or vegetable broth.
How to make it
Sauté the rice with the spices and olive oil for a bit. Then add the diced vegetables and sauté for a few more minutes. Add hot water and let it cook for 17-20 minutes, depending on the desired doneness.
