Cream of broccoli

Ingredients:

– 4-1/2 cups coarsely chopped fresh broccoli
– 1/2 cup water
– 4 egg whites
– 2 egg yolks
– 1 tablespoon grated Parmesan cheese
– 2 teaspoons lemon juice
– 1/2 teaspoon dried basil
– 1/4 teaspoon salt
– 1/8 teaspoon pepper
– 12 cherry tomatoes, halved
– Fresh basil leaves (optional)

Instructions:

1. Combine broccoli and water in a large pot and bring to a boil. Cover, reduce heat to medium, and cook for 10 minutes or until tender. Drain and rinse with cold water.

2. Combine broccoli, egg whites, egg yolks, Parmesan, lemon juice, basil, salt, and pepper in a food processor and process for 3 minutes or until smooth. Cover with kitchen foil.

3. In a baking dish, pour hot water into the baking dish to a depth of 1 inch. Bake at 350°F for 1 hour or until the edges are firm and the center is set.

4. Remove water; let cool on a rack for 15 minutes. Loosen the edges of the Tureen with a sharp knife; invert onto a plate. Cut into 16 slices, arrange 2 slices on each plate.

5. Garnish with halved cherry tomatoes and basil leaves.
