Ingredients:
1 Onion
1 Leek
1 or 2 Ripe tomatoes
A handful of raisins
Spices to taste (salt, pepper, oregano, basil, sweet paprika)
1 Egg
Oil
Instructions:
Cook the broccoli florets in boiling water with salt.
In a pan with oil, sauté the diced onion and leek until they are softened. Add peeled and diced tomatoes, and fry until the water content is reduced.
Add raisins and spices (white pepper, oregano, basil, and a tablespoon of sweet paprika).
Pour the sauce over the previously cooked broccoli and gently mix the ingredients in the pan, being careful not to break the broccoli florets.
In a separate pan, make a thin French omelet with one egg. Cut it into small squares.
Serve the broccoli on a plate and top it with the omelet squares.
