Broccoli skewers with corn oil emulsion, lemon, and soy sauce

 

**Ingredients:**
– 3 whole broccoli
– 50 ml corn oil
– 1 medium lemon
– 3 tablespoons soy sauce

**Instructions:**
1. Make a mixture with the corn oil, lemon juice, and soy sauce; stir well until it is emulsified.
2. Cut the broccoli florets and insert them into the skewers. Brush the skewers with the emulsion, reserving the rest of the mixture for brushing during cooking.
3. Heat the grill or pan, and when it’s at high temperature, place the skewers on the grill for about 3 minutes on each side, while brushing or applying the emulsion mixture to the skewers.
4. To finish, pour the remaining mixture over the skewers and, using a kitchen torch at high heat, give it two or three passes over the entire surface of the skewer.
