Last November, we were lucky to share with him our BroCOOLovers, the “instatrip” we organized through the broccoli fields of Murcia. In addition to enjoying his presence, he gave us this fantastic broccoli omelette recipe that we share with you. Don’t forget to visit his blog and follow him on social media because it’s a pleasure. What we need
- 500 g of broccoli
- 4 or 5 free-range eggs
- 1 or 2 cloves of garlic
- 2 tablespoons of extra virgin olive oil
- Salt
How we do it
- Remove the leaves from the broccoli, if any. Cut the stem and remove the florets. Wash.
Peel the stem and chop it. Also chop any large florets. - Steam the broccoli for about 3 or 4 minutes.
- Chop the broccoli.
- Peel and chop the garlic cloves.
- Heat a medium-sized skillet with olive oil and garlic over medium heat.
- When it starts to brown a little, add the broccoli and increase the heat.
- Sauté for a couple of minutes to mix flavors and let the broccoli lose moisture.
- Season with salt and let it cool.
- Crack the eggs into a bowl and beat them.
- Once beaten, season with a little salt and add the broccoli. Mix.
Let it rest for a few minutes. - Heat the skillet again, and if necessary, grease it again with a little oil.
- When it’s hot, pour the omelette mixture and cook to taste. A couple of minutes on one side and a minute or a minute and a half on the other are enough to get the texture I like.
- And that’s it. Serve immediately. Enjoy your meal!
