These broccoli meatballs are healthy, flavorful, and very easy to prepare. They are a fantastic option for vegetarian meatball lovers.
Ingredients for four people:
For the meatballs:
– 500g broccoli
– 1 onion
– 2 eggs
– 100g grated Parmesan cheese
– 75g breadcrumbs
– 50g textured soy (optional)*
– Salt
– Black pepper
For the sauce:
– 1 Greek yogurt or natural yogurt (unsweetened)
– 1 lemon
– 1 tbsp chopped chives
– 1 tbsp chopped parsley
– Salt
– Black pepper
Instructions:
1. Wash the broccoli, cut the stems, and put the florets along with the peeled and quartered onion in a food processor or kitchen robot. Process until you get a coarse mixture.
2. Pour the mixture into a glass bowl or microwave-safe container, cover, and cook for 6 minutes at maximum power (without adding any water).
3. Wait a few minutes for it to cool slightly, then add breadcrumbs, eggs, grated cheese, textured soy (if using), and season with salt and black pepper to taste. Mix everything well.
4. Preheat the oven to 200ºC with both top and bottom heat.
5. Cover the baking tray with parchment paper. Form the meatballs and place them on the baking tray, leaving some space between them.
6. Bake for approximately 25 minutes or until they are golden brown.
Preparing the sauce:
While the meatballs are cooking, prepare the sauce. Pour the yogurt into a bowl, add chopped chives and parsley. Add lemon zest and 2 tablespoons of lemon juice, and season with salt and black pepper. Mix well, and the sauce is ready.
