Broccoli Gazpacho

The season for gazpachos and cold soups is officially open! Today, we present a variation of the famous gazpacho, but with a very special ingredient: broccoli. A healthy, delicious meal perfect for cooling off during the summer.

Ingredients:

– 1 broccoli
– 4 ripe tomatoes
– 1 cucumber
– 1 green bell pepper
– ½ red onion
– 2 garlic cloves
– 4 tablespoons of olive oil
– 3 tablespoons of apple cider vinegar
– Water to taste
– Pepper
– Salt

Instructions:

1. Cut the broccoli florets, separating them from the stem, and blanch them for 10 minutes in boiling water.
2. Refresh them in a bowl with water and ice, and reserve some florets for decoration.
3. Wash, peel, and chop all the vegetables (bell pepper, onion, tomatoes, cucumber, and garlic).
4. In the blender, start with the bell pepper, onion, cucumber, and tomatoes, and finally, add the broccoli.
5. Blend all the ingredients and slowly add the apple cider vinegar and olive oil.
6. Season with salt and pepper to taste.
7. Refrigerate the blend to serve it very cold.
