Looking for tricks to make your kids love eating vegetables? Here’s a solution with delicious broccoli, cheese, and breadcrumbs muffins. An alternative to our usual way of cooking broccoli, healthy and perfect for the whole family.
Ingredients:
For 6 muffins
- 250 grams of broccoli
- 3 eggs
- 120 grams of fresh cheese
- 90 grams of breadcrumbs
- 1 teaspoon of olive oil
- ½ teaspoon of baking soda
- Seeds (sunflower, sesame, pumpkin)
Instructions:
Preheat the oven to 200 degrees.
Wash and cut the broccoli florets.
In a saucepan, bring water to a boil.
Once the water is boiling, add the broccoli and cook for about 5 minutes.
Drain the florets and mash them with a fork.
In a bowl, add the fresh cheese, breadcrumbs, a teaspoon of olive oil, baking soda, and the broccoli. Mix well.
Add the eggs and mix again until you have a consistent batter.
Using an ice cream scoop, place the same amount of batter in muffin or cupcake molds.
Sprinkle seeds on top.
Bake for 30 minutes at 180 degrees.
Let it cool, and it’s ready to serve.
