Today, we propose this recipe for broccoli, avocado, pine nut, and coconut milk soup. It’s a healthy dish rich in vitamins and minerals. Enjoy!
Ingredients:
- 1 broccoli
- 2 avocados
- 10 chives
- 5 parsley sprigs
- Coconut milk
- 40 grams of pine nuts
- Half a lemon’s juice
Instructions:
1. Wash and chop the broccoli, boil it in water, enough to cover it.
2. Once cooked, set it aside.
3. Chop the herbs, peel and cut the avocado, and sprinkle it with a little lemon juice to prevent oxidation.
4. Mix the herbs with the avocado and broccoli, and add the cooking water until you achieve the desired texture.
5. Brown the pine nuts in a dry pan.
6. Serve the soup, add a splash of coconut milk, and sprinkle with pine nuts.
7. It can be served hot or cold, according to your preference.
