Scallion and Broccoli Salad with Tofu Cream

This is a tasty and nutritious recipe that is highly recommended for vegans.

Ingredients:

– 500g broccoli
– 2 scallions
– 2 leeks
– 2 carrots

For the tofu cream:

– 300g tofu
– 1 lemon
– ½ glass of olive oil
– 1 garlic clove and salt.

Instructions:

1. Separate the broccoli florets, wash them well, and cook them al dente in salted water.
2. Drain and set them aside to cool.
3. Cut the stems of the leeks, keeping only the white part. Blanch them in boiling salted water for 3 minutes. Drain and refresh with cold water.
4. Cut the blanched leeks into slices, as well as the carrots and scallions. Mix everything with the broccoli.
5. Finally, prepare the tofu cream by blending all the ingredients thoroughly in a blender. Season the salad with this cream.
