The frittata, from the Italian fritto, is an Italian specialty resembling a French omelette and is often filled with various ingredients, many of them vegetables. This time, let’s see how to prepare a delicious frittata made with broccoli. Get ready for a tasty, fun, and highly nutritious dinner.
Ingredients:
1 kg. of broccoli
1 bunch of spinach
2 leeks
2 cloves of garlic
250 cc of cream
6 eggs
150 grams of goat cheese
100 grams of Parmesan cheese
Chopped chives
Salt, pepper, and olive oil
Instructions:
Boil the broccoli florets in plenty of water with coarse salt. Cook for about 4 minutes, remove, and immerse in cold water.
In a pan, sauté chopped leeks and two cloves of minced garlic in olive oil. Once cooked, add the spinach and sauté. Incorporate the broccoli. Arrange the vegetables in a baking dish.
In a bowl, mix the cream with the eggs. Add crumbled goat cheese, Parmesan cheese, and chopped chives. Season with salt and pepper, and mix until well combined.
Pour the cream mixture over the vegetables. Finish with grated cheese and bake in the oven at 180º for half an hour.
