Araceli’s proposal couldn’t be simpler to achieve the perfect dish: sautéed chickpeas with spring onion, broccoli, and shiitake mushrooms with a fried egg. Nothing easier, nothing more challenging than a fried or sunny-side-up egg. The combination of these foods is absolutely delicious, and on top of that, it couldn’t be easier to prepare. As always: easy recipes that are not so complicated that we feel lazy to step into the kitchen, and healthy recipes that we can enjoy knowing that what we are eating promotes a healthier life.
What you’ll need
- 150 g of cooked chickpeas
- 1/2 spring onion
- 5 or 6 shiitake mushrooms
- 1/2 broccoli
- 1 egg
- Extra virgin olive oil, salt, and pepper
- Sesame seeds for decoration
How to make it
Start by sautéing the vegetables with olive oil; save the broccoli for the end or steam it for a couple of minutes in the microwave. Then add the cooked chickpeas. Finally, cook the egg sunny-side-up and add it to the dish. Add a bit of salt, olive oil, pepper, and sesame seeds, and enjoy!
