A very complete and nutritious recipe that reimagines a typical dish, San Jacobo, by using broccoli as the main ingredient.
**Ingredients:**
– 1 broccoli
– 30g breadcrumbs
– 30g Old Amsterdam cheese (grated and sliced)
– 3 egg yolks
– 50g lamb ham
– 1 sweet potato
– 1 tsp 5-spice blend
– 1 tsp oregano
– 1 tsp garlic powder
– 1 tsp smoked paprika (pimentón de la Vera)
– 30g chickpea flour
– Olive oil, salt, pepper
**Instructions:**
1. For the side dish: Cut the sweet potatoes in half without removing the skin, then slice them. Transfer to a bowl. Mix the 5-spice blend, oregano, garlic powder, smoked paprika, and chickpea flour. Coat the sweet potatoes well with the spice and olive oil mixture. Bake at 190ºC for 20 minutes or until tender.
2. For the “mass” of the San Jacobos: Chop the broccoli in a food processor. Mix with breadcrumbs, grated Old Amsterdam cheese, salt, pepper, and egg yolks.
3. Shape the San Jacobos on the work surface, pressing the mixture to make them thin. Place a slice of cheese on top and lamb ham on one portion of broccoli. Cover with another portion. Grill well on both sides.
4. For the mayonnaise: In a blender, combine the egg white and any spice mixture left after seasoning the sweet potatoes. Emulsify with olive oil until it reaches a mayonnaise-like texture.
5. Serve the San Jacobos with the side of sweet potatoes and a dollop of spice mayonnaise.
