The original [recipe](https://www.instagram.com/explore/tags/receta/) is from [@inthekitchenwithm](https://www.instagram.com/inthekitchenwithm/). The one in the photo has a couple of modifications: Mahón cheese instead of parmesan and chickpea flour instead of oat flour. Here’s the original recipe.
Ingredients
⚡2 cups raw or frozen broccoli
⚡1 large egg
⚡1/4 cup chopped onion
⚡1/3 cup grated cheese
⚡3/4 cup panko or breadcrumbs
⚡2 tablespoons chopped parsley or other herbs (optional)
⚡Salt and pepper
Instructions
- Preheat the oven to 200°C.
- Blanch the broccoli for 1 minute, quickly rinse with cold water to stop the cooking. Drain well.
- In a food processor or blender, chop the broccoli and transfer it to a large bowl. In another bowl, beat the egg, and add it along with the rest of the ingredients to the broccoli bowl. Mix well. Shape the mixture into croquettes with your hands and place them on a baking tray lined with parchment paper.
- Bake for 10 minutes until golden and crispy, then remove the tray, flip the croquettes, and bake for another 10 minutes or so.
