Broccoli and cauliflower croquettes recipe

Everyone loves croquettes, right? The most typical ones in Spain are perhaps the varieties of ham or chicken, classic products of our gastronomy that have never been missing in any family that appreciates good food.

However, despite being so delicious, we must not forget that croquettes are a food that can easily be high in calories, especially considering that they are typically fried, which further increases their calorie count.

But did you know that we can also opt for healthier alternatives using vegetables like broccoli? Today we bring you a finger-licking recipe: delicious broccoli and cauliflower croquettes.

Ingredients for broccoli and cauliflower croquettes

To prepare this recipe with approximately 15 units, you will need the following ingredients:

  • 250 grams of broccoli.
  • 250 grams of cauliflower.
  • 2 eggs.
  • 80-100 grams of onion, equivalent to approximately 1 small onion.
  • Extra Virgin Olive Oil (EVOO).
  • Garlic, parsley, and other spices like pepper, for example.
  • A bit of grated cheese.

How to prepare broccoli and cauliflower croquettes

First, preheat the oven to 180 ºC. Then, cook the broccoli and cauliflower by steaming both cruciferous vegetables with a small amount of water.

For this, use the microwave for greater convenience and efficiency. This way, the cauliflower and broccoli will soften, making them easier to work with later.

Once done, mash the broccoli and cauliflower with a fork until you get a soft texture. Next, sauté the finely chopped onion and add it to the mashed cauliflower and broccoli.

Then, add the 2 eggs and use spices according to your taste, possibly adding a touch of cheese according to each diner’s preference. We especially recommend a bit of gouda cheese as it gives a fantastic flavor.

After achieving the mixture, add a splash of Extra Virgin Olive Oil and shape the mixture into your favorite croquette shapes.

After the preparation process, bake your broccoli and cauliflower croquettes in the preheated oven at 180ºC for about 15 minutes, checking until they are golden. If they brown before 15 minutes, take them out of the oven to avoid burning. The times are approximate and depend on each appliance.

Once you have finished all these steps, all that’s left is to plate the croquettes and optionally serve them with a light sauce, such as mayonnaise or honey and mustard. Although it won’t be necessary, as the flavor will be excellent with all these ingredients mixed in.
