Broccoli omelette

Last November we were lucky enough to share with him our BroCOOLovers, the "instatrip" that we organized through the broccoli fields of Murcia. In addition to enjoying his presence, he gave us this fantastic broccoli tortilla recipe that we share with you. What we need

  • 500g broccoli
  • 4 or 5 eggs
  • 1 or 2 garlic cloves
  • 2 tablespoons extra virgin olive oil
  • Salt

How we do it

  1. Remove the leaves from the broccoli, if any. Cut the stem and remove the bouquets. Wash.
    Peel the trunk and chop it. Also chop the bouquets that are large.
  2. Steam the broccoli for about 3 to 4 minutes.
  3. Chop the broccoli.
  4. Peel and chop garlic cloves.
  5. Heat a medium frying pan over medium heat with olive oil and garlic.
  6. When you start to brown a little, pour the broccoli and raise the heat.
  7. Rehome for a couple of minutes to mix flavors and let broccoli lose moisture.
  8. Sprinkle and let warm.
  9. Crack the eggs in a bowl and beat.
  10. Once beaten, season with a little salt and incorporate the broccoli. Mix.
    Let stand for a few minutes.
  11. Reheat the pan and, if necessary, grease it again with a thread of oil.
  12. When it's hot, pour in the tortilla mixture and set the taste. With a couple of minutes on one side and a minute or a minute and a half on the other, it's enough to get the point I like.
  13. And that's all. Serve right away. Have a good time!
