Broccoli pancakes with yogurt sauce

What we need

For pancakes:
🔸250g broccoli
🔸2 carrots
🔸1 spring onion
🔸1 cdta garlic powder
🔸1 cdta Provencal herbs
🔸2 eggs
🔸70g Parmesan cheese or Grana Padano

For the yogurt sauce:

🔸1 natural Greek yogurt
🔸Zebollin (washed, dried and chopped)
🔸2 cdas of extra virgin olive oil
🔸1 cda lemon juice
🔸sal
🔸pimienta

How we do it

  • Preheat the oven to 220 degrees up and down.
  • In a food processor or grater, chop the broccoli, carrots, onion and cheese, and mix all the ingredients in a bowl. – Put vegetable paper on an oven plate, with a spoon put a lot and crush a little to give it the shape of pancakes.
  • Bake for 20 minutes at 220 degrees.
  • For the preparation of the sauce we mix all the ingredients in a bowl. Test and rectify if applicable. Accompany the pancakes with this sauce.
