Broccoli and cheese balls

The original recipe is @inthekitchenwithm. The one in the photo has a couple of modifications: Mahon cheese instead of parmesan and chickpea flour instead of oatmeal. We tell you the original recipe.


⚡2 cups raw or frozen broccoli
⚡1 egg L
⚡1/4 cup chopped onion
⚡1/3 cup grated cheese
⚡3/4 cup panko or breadcrumbs
⚡2 tablespoons chopped parsley or other herb (optional)
⚡sal and pepper

How we do it

  • Preheat oven to 200C.
  • Let's scald the broccoli for 1 minute, we pass quickly through cold water to cut the cooking. We're doing fine.
  • In a food processor or blender, chop the broccoli, move it into a large bowl. In another bowl beat the egg, and add it along with the other ingredients to the broccoli bowl. We mix well. We shape croquettes with our hands and place them on a tray lined with baking paper.
  • Bake for 10 minutes until we see them golden and crisp and take out the tray, turn the croquettes over and bake again for another 10 minutes or so.
