Our friend Damián Serrano, the author behind the project @estoyhechouncocinillas, has created an impressive recipe for whole wheat pasta with salmon and broccoli that we had to share with all of you. By the way, we interviewed Damián some time ago on this platform; you can read it here.
We’ll summarize below what you need and how to make it. And you know what’s best? It’s so, so, so easy that you won’t be able to resist. Here we go!
What do you need?
- 400 g. of whole wheat pasta (or your favorite type of pasta)
- 1 head of broccoli, cut into florets
- 300 g. of skinless, diced salmon
- 2 cloves of chopped garlic
- 1 small piece of chopped ginger (or ½ teaspoon of powder)
- 1 small Cayenne pepper, split in half
- 4 tablespoons of extra virgin olive oil
- Salt and pepper
- Grated cheese for pasta
For garnish:
- Black and golden sesame seeds
- Mixture of 7 Japanese spices (optional)
How to make it step by step
- Boil the broccoli in salted water or steam it for 5 minutes.
- In a pan, heat the oil over medium heat and sauté the salmon for about 2 or 3 minutes.
- Add the garlic, cayenne pepper, and ginger. Sauté for an additional 3 or 4 minutes. Season with salt and pepper, then set aside.
- Cook the pasta according to the manufacturer’s instructions for al dente minus 1 minute.
- Drain the pasta and mix it with the salmon and broccoli. Sauté over high heat for an additional 1 minute.
- To serve, sprinkle with sesame seeds, Japanese spices, and grated cheese.
