Broccoli pancakes with yogurt sauce.

What You Need

For the pancakes:
🔸250g broccoli
🔸2 carrots
🔸1 spring onion
🔸1 tsp garlic powder
🔸1 tsp herbes de Provence
🔸2 eggs
🔸70g Parmesan cheese or Grana Padano

For the yogurt sauce:

🔸1 natural Greek yogurt
🔸Chives (washed, dried, and chopped)
🔸2 tbsp extra virgin olive oil
🔸1 tbsp lemon juice

How to Make It

  • Preheat the oven to 220°C (428°F) top and bottom heat.
  • In a food processor or with a grater, chop the broccoli, carrots, onion, and cheese, and mix all the ingredients in a bowl. – Place parchment paper on a baking tray, spoon heaps onto it, and flatten a bit to shape them into pancakes.
  • Bake for 20 minutes at 220°C (428°F).
  • For the sauce preparation, mix all the ingredients in a bowl. Taste and adjust if necessary. Serve the pancakes with this sauce.
